BB Seared Tuna Steak

Ingredients:
4 oz tuna steak
2 Tbsp soy sauce
1 Tbsp chopped scallions
Cooking spray
2 cups bok choy
Salt and pepper

Ingredients:
Preheat skillet, lightly mist with cooking spray, cook tuna approx 2 mins per side, or to your desired doneness. Steam bok choy, then serve with tuna and sprinkle both with soy sauce and scallions.

Easy Tuna Melts

I learned this recipe while I worked at a PreSchool in their kitchen. I’ve altered it slightly to make it a bit healthier!

Ingredients:

  • Whole wheat English muffins (1 whole per person)
  • Pre-cooked Tuna (>4 oz. per person)
  • Mozarella cheese slices
  • Low-fat, low-sugar, olive oil based Mayonnaise

Instructions:

  1. Mix together the Tuna and the Mayo, until it forms a batter-like consistency (you will still see the strands of Tuna meat).
  2. Place muffin halves on cookie sheet, inside up.
  3. Spread >1 Tbsp of Tuna mixture across each muffin half.
  4. Top with Mozarella.
  5. Bake at approximately 350 degrees until cheese is melted.
