Easy Tuna Melts
February 16, 2013
I learned this recipe while I worked at a PreSchool in their kitchen. I’ve altered it slightly to make it a bit healthier!
Ingredients:
- Whole wheat English muffins (1 whole per person)
- Pre-cooked Tuna (>4 oz. per person)
- Mozarella cheese slices
- Low-fat, low-sugar, olive oil based Mayonnaise
Instructions:
- Mix together the Tuna and the Mayo, until it forms a batter-like consistency (you will still see the strands of Tuna meat).
- Place muffin halves on cookie sheet, inside up.
- Spread >1 Tbsp of Tuna mixture across each muffin half.
- Top with Mozarella.
- Bake at approximately 350 degrees until cheese is melted.
