Ingredients:
Servings: 4

  • 1 lb catfish fillet
  • 1 cup seasoned fish coating
  • 1/2 cup egg substitute
  • Emeril’s Original Essence or other creole seasoning, blend
  • salt (optional)
  • black pepper (optional) or cayenne pepper (optional)
  • lemon wedge

Directions:

  1. Preheat oven to 450°F.
  2. Heavily spray a large non-stick baking pan with non-stick cooking spray.
  3. Pour egg substitute in large shallow bowl.
  4. Sprinkle with some Emeril’s essence; also some salt and pepper, if you prefer.
  5. Place fish coating on a large plate.
  6. Add some Essence to this also, if you wish.
  7. Rinse fish fillets.
  8. Squeeze lemon wedges over fish.
  9. Sprinkle with Essence, salt and pepper on both side of fish.
  10. Dip in coating.
  11. Dip fish in egg substitute, then again in fish coating, and place on baking sheet.
  12. Bake at 450°F for approximately 10-15 minutes, until bottom of fish starts to brown.
  13. Turn fish, and bake about 5-8 minutes more, until fish is browned and crisp.
  14. Serve.

Diane’s Spinach Chicken

Ingredients:
4 oz chicken breast
Optional amount of spinach
2-4 oz of Swiss cheese, shredded
Desired sauce (I chose a mix of ginger dipping sauce and vinaigrette dressing)
Cooking spray
Desired seasonings

Instructions:
Preheat oven to 375.
Pound and tenderize the chicken to flatten.
Spray foil and lay chicken out flat.
Place spinach in center of chicken pieces, cover with cheese.
Sprinkle with desired spices and a little of sauce.
Roll up chicken around filling, then drizzle with more sauce and spices.
Wrap tight in foil.
Bake for 20 minutes of until cooked through.

BB Lemon Chicken

Ingredients:
4 oz chicken breast
2 Tbsp lemon juice
2 Tbsp chopped scallions
Cooking spray
2 cups spinach
Salt and pepper

Instructions:
Preheat oven to 375. Lightly mist foil with spray, pile spinach in center, sprinkle with scallions. Place chicken in center and drizzle lemon juice over all. Wrap tightly. Cook for 20 mins or until cooked through.

BB Chicken Dijon

Ingredients:
4 oz chicken breast
2 Tbsp Dijon mustard
Cooking spray
2 cups asparagus
Salt and pepper

Instructions:
Preheat oven to 375. Lightly mist a large piece of foil with cooking spray, place chicken in center, brush with mustard, wrap tightly in pouch. Cook for 20 mins or until cooked through. Steam asparagus to serve as side.

BB Seared Tuna Steak

Ingredients:
4 oz tuna steak
2 Tbsp soy sauce
1 Tbsp chopped scallions
Cooking spray
2 cups bok choy
Salt and pepper

Ingredients:
Preheat skillet, lightly mist with cooking spray, cook tuna approx 2 mins per side, or to your desired doneness. Steam bok choy, then serve with tuna and sprinkle both with soy sauce and scallions.

Ingredients:
4 oz skinless, boneless chicken breast
2 cloves garlic
1 tsp chopped rosemary
Cooking spray
2 cups Brussels sprouts
Salt and pepper to taste
Seasoning of choice

Instructions:
Preheat oven to 375. Lightly mist foil with cooking spray. Assemble chicken, garlic, rosemary, salt, pepper in center, wrap tight into a pouch. Cook for 20 mins or until cooked through.

Boil Brussels sprouts in boiling water until tender. Season as desired.
